Steps
Heat the oven to 350°F. Grease a 9x5-inch loaf pan.
Mash the bananas in a large bowl until mostly smooth.
Whisk in the melted butter and sugar.
Whisk in the egg, vanilla, and sour cream.
Fold in the flour, baking soda, and salt until just combined, then stir in the walnuts if using.
Pour into the pan and smooth the top.
Bake 55-65 minutes, until a toothpick in the center comes out clean.
