If the breasts are thick, pound them to an even thickness. Whisk the buttermilk, eggs, and of salt in a bowl; add the chicken and marinate at least 30 minutes (up to overnight in the fridge).
In a shallow dish, whisk the flour, cornstarch, smoked paprika, and the remaining of salt.
Heat the oil in a heavy skillet or Dutch oven to 350°F over medium-high heat - about deep.
Pull each piece of chicken from the marinade, letting the excess drip off, and dredge firmly in the flour mixture, pressing to adhere. Rest 5 minutes so the coating sets.
Fry 2 pieces at a time, 4-5 minutes per side, until deep golden and the internal temperature reaches 165°F. Drain on a wire rack (not paper towels, which steam the crust).
Stir the mayonnaise and hot sauce together. Toast the buns cut-side down in a dry skillet until golden.
Build each sandwich: spicy mayo on both bun halves, fried chicken, a layer of pickles, top bun. Serve immediately.
