  1. Mash the ripe banana in the bottom of a jar or bowl with a fork until mostly smooth.
  2. Add the rolled oats, milk, Greek yogurt, chia seeds, honey, vanilla, and a pinch of salt. Stir until everything is combined.
  3. Stir in your chosen flavor extras from the 5 Ways list below. Seal the jar.
  4. Refrigerate at least 8 hours, or overnight.
  5. In the morning, give it a good stir. If it is thicker than you like, thin with a splash of milk. Eat cold.

5 ways to flavor it

  1. Peanut Butter Banana: stir in 1 tbsp peanut butter (about $0.20) and top with the other half of the banana, sliced (about $0.13).
